Healthy Breakfast Pancakes

I always feel guilty when I eat pancakes, thinking about all the white flour and butter that goes into them. While doing some research online I came across lovely, healthy pancake recipes by Lorraine Pascale.

I have a hard time following recipes and prefer cooking by feel so here's my version of oats, banana and flax seed pancakes.

Ingredients:

Oats - 75g

Whole eggs - 2

Baking powder - 1 tsp

Ripe banana - 1 (medium)

Low fat yoghurt - 4 tbsp

Flax seeds (crushed) - 1 tsp

Optional: 1 teaspoon of honey/ 1 teaspoon of demerara sugar

Method:

1. Blitz the oats, eggs, baking powder, banana and yoghurt in a blender. Set the mixture aside. The consistency should be like that of normal pancake batter. If its too thick add more yoghurt and if its too thin, a bit more oats. Let the mixture sit for about 20 minutes so the baking powder can work its magic.

2. Brush a nice hot frying pan with cooking oil and pour the mixture into the pan to make about 4 to 6 pancakes.

3. Sprinkle the flax seeds on the pancake before flipping it over and allowing it to cook through for a couple of minutes.

The honey or demerara sugar can be whisked in along with the pancake mixture. If not, you can drizzle honey over the pancakes before you eat them.

If you aren't a fan of flax seeds, use chia seeds instead.
